Toured Italy back in 73. Monaco when no race going. Fancy restaurant on the beach in Nice,,,they didn't know how to make ravioli's, Fact it was really hard to find a good pizza any where. 1st restaurant we came across in Italy we stopped for Spaghetti, somptin lost in the translation there. Spent a whole afternoon laying aroun under the Leanin Tower of Piza. Best Italian food was found in Germany. Good Times..

Sounds like an amazing trip!

Traveling in Europe in the 70s must have been quite an adventure.

And spending an afternoon under the Leaning Tower of Pisa sounds pretty perfect.

I’m relieved the ravioli incident happened in France and not in Italy.

If that happened here, the pasta police would have been called immediately.

If you ever come back to Italy, let me know, I’ll make sure you finally taste the real DOC stuff.

It looks like my Apprentice badge has been sitting in the rearview for a bit now, so naturally I’m starting to wonder when the next milestone— Enthusiast —kicks in. Is there some secret handshake, a hidden checklist, or does it just happen one day when you’ve posted enough and stopped second‑guessing every tiny thing? Mostly trying to figure out when I can officially claim I’ve “been around long enough to know better,” even if that’s only half true.

Thank you, that’s really kind.

I don’t know about “evolving”… but I’ve definitely picked up a few lessons along the way.

For now, I’d say these are the main ones:

You really have to pay attention and not underestimate anything.

You never stop learning, there’s always more to understand.

There’s no one-size-fits-all, everyone responds differently.

Going slow and being cautious makes a big difference.

And probably the biggest one: experience teaches you more than any guide, and there’s a lot to learn from those who’ve already been through.

I recently jumped into my first purchase and participating in some group testing for the product.

I am not an apprentice yet but I'm still researching who to buy from. I will need reta soon but I want other stuff too. Still trying to find the best price and the shipping costs but I might buy more than the threshold for free shipping. I'M SO INDECISIVE!
